Ingredients
300g chicken breast
salt & pepper, to taste
1 clove garlic, crushed
2 corn tortillas, warmed
50g rocket
1/2 avocado, diced
Salsa
125g cherry tomatoes
1/4 red onion, finely chopped
1/4 green capsicum, deseeded and finely chopped
1 clove garlic, peeled and grated
1/4 bunch fresh coriander, leaves picked
1/4 bunch mint, leaves picked
1 green chilli, deseeded and chopped
2 tsp lime juice
salt & pepper, to taste
Method
1 Place chicken, 1/2 tsp salt, pepper and garlic in a saucepan with enough cold water to cover by 3cm.
2 Bring to the boil, cover and simmer for 8-10 minutes, skimming any white scum from the surface. Stand for 5 minutes, before removing and slicing.
3 Combine salsa ingredients and season with salt and pepper.
4 Top tortillas with sliced chicken, salsa, avocado and rocket and serve.
